Ingredients (serves 2)
50ml olive oil
2 cloves minced garlic
2 bunches fresh basil
250g smoked salmon
20g parmesan (or to taste)
250g penne pasta
Chopped parsley to garnish
Salt & pepper
In a large hot pan, add the olive oil and allow to heat.
Add the minced garlic and fresh basil leaves to the pan, along with 200g of the smoked salmon. Allow to cook for 2 to 3 minutes.
Add the vodka and cook for a few minutes to cook out the alcohol.
Add the cream and allow to simmer for a further 5 to 7 minutes on a medium heat.
While the sauce is simmering, boil a pot of water and add the pasta, cooking until al dente.
Drain the cooked pasta and add to the sauce, then allow to simmer for a further 3 to 4 minutes. Add parmesan to taste.
Serve on a large platter, and sprinkle the chopped parsley and remaining smoked salmon on top. Season with salt and pepper.
