500g vongole (pipis)
Extra virgin olive oil
2 large garlic cloves, finely chopped
1 red chilli, finely chopped
1/4 cup fresh parsley, finely chopped
Bring a large pot of salted water to the boil, and add your spaghetti. Cook as per packet instructions.
Meanwhile, heat a large frying pan over a medium-high heat. Add 2 tbsp olive oil, garlic, chilli, and anchovies. Cook until the anchovies begin to break down.
Once the pasta is cooked and the vongole is steaming and opened, straight your pasta straight into the pan (the pasta will bring some cooking water across). Add the parsley and stir / toss to bring it all together.
